You can. Simply drag the music in iTunes to the desired location.
If you want to take music off the iPod, and the iPod is not synced to your computer, you need some additional tools in order to be able to do so. Google them up to find them.
Make sure that the music you are spending so much effort getting off of the iPod has no DRM on it, else you may find that you’ve just wasted that time, because DRM’d music can’t be played on other computers anyway.
